Say hello to your new favorite treat: Chocolate Granola Cups! These little bites of joy are crafted with our rich artisan granola, creamy nut butter of your choosing, and smooth, dreamy chocolate. They’re sweet, a little nutty, and totally irresistible. Perfect for sharing (or not).
Instructions
- In a mixing bowl, combine Back Roads Ancient Grains Granola, nut butter, maple syrup, melted coconut oil, and salt. Mix until sticky and well combined.
- Press about 1½ tbsp of the mixture into the base and up the sides of a mini muffin tin or silicone molds. Place in freezer to set while making the filling.
- Melt the chocolate chips with coconut cream in a small saucepan over low heat (or microwave in 30-sec intervals). Stir until smooth. Add vanilla and a pinch of salt.
- Remove granola bases from the freezer. Spoon chocolate mixture into each cup, smoothing the top.
- Sprinkle each cup with more Ancient Grains Granola. Add flaky sea salt if desired.
- Refrigerate for 30 minutes, or until firm. Gently pop out of tin or molds to serve.
Tips
- Store in the fridge for up to a week, or freeze for longer shelf life.
- Want a twist? Add a layer of almond butter or a dried cherry before adding the chocolate.
- Use silicone molds for easiest release.
