Sourcing Local Ingredients

We source nearly 30 ingredients from around the world in order to produce our nine granola varieties. If it were possible to get all of those ingredients locally, we would, but it’s just not feasible.

Our Apricot Chai Granola is one of our four paleo and grain-free granola varieties. It’s coconut based with an abundance of dried apricots, cashews, pumpkin seeds, sunflower seeds, sesame seeds, honey Vermont maple syrup, and fresh ground chai spices. The chai spice blend we use is made by Chai-Wallah, another business located here in the Cotton Mill Hill in Brattleboro.

Local Supplier

At Chai-Wallah they believe in the simplicity of the ingredients to speak for themselves. Thier certified organic whole spices are masterfully blended and ground to order in small batches to ensure freshness and potency.

Chai-Wallah owner, Neil Harley (green shirt) hand delivers our chai orders on a weekly bases. He and Peter (black shirt) always enjoy talking shop.

What is Chai?

Chai is made using different formulas, depending on the region where it is being consumed, but there are a number of standard ingredients: black tea, ginger, cardamom, cinnamon, fennel, clove and black pepper.

The chai blend that Niel produces for our Apricot Chai Granola is a mixture of cardamom, cinnamon, and ginger. The chai spices pair so well with the other ingredients and the aroma permeates the Cotton Mill Hill each time it’s baked.
