Nothing says summer like a warm peach crumble bubbling with juicy, sun-ripened fruit and finished with a golden crown of our Maple Pecan granola. The flavor of roasted nuts and toasted coconut, kissed with real maple syrup, brings just the right sweet crunch to every spoonful. It’s like summer in a bowl…cozy, a little nostalgic, and impossible to resist.
Instructions
- Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
 - In a mixing bowl, toss peach slices with maple syrup, cornstarch, vanilla, cinnamon, and salt until evenly coated. Spread into prepared baking dish.
 - In a separate bowl, combine Maple Pecan Granola, almond flour, melted coconut oil (and maple syrup if using). Mix until crumbly and well combined.
 - Sprinkle the granola mixture evenly over the peach filling.
 - Bake for 35-40 minutes, or until the fruit is bubbling and the topping is golden brown.
 - Cool slightly before serving. Delicious warm or at room temperature.
 - Optional: Top with vanilla ice cream or coconut whipped cream.
 
Tips
Try adding a handful of chopped pecans or walnuts to the top.
You can substitute frozen peaches (no need to thaw).
