
Quarantine Cuisine: Watermelon Feta Salad with Ancient Grains Granola
Description
In this month’s Quarantine Cuisine, Virginia gives us this delightful savory summery salad featuring fresh sweet watermelon, salty feta cheese, and a sprinkling of our very own unsweetened Ancient Grains granola.
Ingredients
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
½ teaspoon salt, or to taste
2 tablespoons olive oil
3 cups cubed (½ –¾ inch) seeded watermelon, drained (from 2 ½ lb piece, rind discarded)
6 cups baby arugula (optional)
1/2 cup Ancient Grains granola
1/3 cup (1 ½ oz) crumbled feta or ricotta salata
1/3 cup chopped fresh basil or mint leaves (optional)
coarsely ground black pepper, to taste
fleur de sel, to taste
Instructions
In a large bowl, whisk together the lemon juice, vinegar and salt in a large bowl, then add the olive oil in a slow stream, whisking until emulsified.
Add the watermelon, arugula (if using), and Ancient Grains granola. Toss to coat, then sprinkle with feta cheese, mint or basil (if using), pepper, and fleur de sel. Serve at once.
