In this edition of Quarantine Cuisine, Liv gives us this simple yet wildly delicious recipe for a sweet corn salad flavored with fresh basil. For a fantastically nutritious crunch, sprinkle on a handful of our uniquely unsweetened Ancient Grains granola. Happy summer, everyone!
5 ears sweet corn
1/2 cup diced red onion
3 tablespoons apple cider vinegar
3 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup fresh basil leaves
1/3 cup Ancient Grains granola (optional)
Cook the corn for three minutes in a pot of boiling water, then drain and immerse the cobs in ice water to cool. When cool, cut the kernels off the cobs and toss with the remaining ingredients. For a tasty crunch, sprinkle on a handful of our Ancient Grains granola! Enjoy.
