Here’s a quick and nutritious meal idea submitted by our co-founder, Virginia. What could be simpler or tastier than avocado toast for breakfast, lunch, or dinner? For an extra healthy crunch, sprinkle the top with a small handful of our unsweetened Ancient Grains granola.
2 slices of your favorite bread
About a tablespoon of olive oil or softened butter
1 peeled garlic clove, optional
1 avocado, sliced
Coarse salt, to taste
Ancient Grains granola, optional
Toast the bread. If using garlic, rub the clove over the toast, then drizzle with olive oil or spread with soft butter. Place half of the sliced avocado on top of each toast, and mash it with a butter knife. Sprinkle with coarse salt, and Ancient Grains granola, if you wish.
