Who doesn’t love some delicious banana bread? Try this tasty spin on an old favorite!
This granola banana bread makes the perfect breakfast or snack, try it out today!
1/3 cup softened organic butter or vegan margarine
½ cup organic maple sugar or coconut sugar
2 ripe organic bananas, mashed
½ cup organic milk, any kind
1 teaspoon organic vanilla extract
1 ½ cups all-purpose organic flour or gluten-free flour blend
1 cup Back Roads organic granola, any flavor
1 ½ teaspoons organic baking powder
½ teaspoon organic baking soda
Arrange the rack in the center of the oven; preheat to 350 degrees. Grease the
inside of an 8½” x 4½” loaf pan.
In a large bowl, cream together butter & sugar until smooth and fluffy. Stir in
mashed bananas, milk & vanilla extract.
In a medium-sized bowl, whisk together flour, ½ cup granola, baking powder &
baking soda. Add dry ingredients to the wet ingredients, folding them in gently
with a spatula until just mixed.
Sprinkle the remaining ½ cup granola across the top of the batter, pressing it
gently to adhere.
Bake for 30 minutes and cover loaf loosely with foil to keep granola topping from
burning. Bake another 20 minutes, or until a toothpick inserted into the middle of
the bread comes out clean. Let cool on rack for 20 minutes before removing the
loaf from the pan and slicing.
